>One of my most favorite things in the summer is grilling chicken for dinner. Actually – scratch that. I love it when my husband grills chicken, and I eat it 🙂

I love having him make extra – but I don’t always know what to make with that extra chicken.  I’ve made some great Caesar salads with that chicken, but sometimes that’s boring.  My goal is to have my husband grill chicken once a week, and then do something different with the leftovers every week!  Here’s the one I came up with this week:

Ingredients:
2 cutlets of grilled chicken, cut into bite-sized pieces
8 oz. uncooked pasta (I love whole wheat pasta)
1 pint grape or cherry tomatoes (sliced in half)
3 oz. crumbled feta cheese
2 TBSP olive oil
2 TBSP lemon juice
1 tsp. oregano
1 tsp. basil
1 tsp. parsley
1 tsp. garlic salt

  1. Cook the pasta according to package directions.  Drain the water, and leave the pasta in the pot.  
  2. Add the cut chicken to the cooked pasta, and cook it over low heat.
  3. Add lemon juice, olive oil, and spices into the pot.
  4. Add halved tomatoes and feta cheese.
  5. Stir for 5-8 minutes over low heat to combine flavors.
  6. Serve, and enjoy!
This makes about 4-5 servings.

    >Yum! I like to make quesadillas with leftover grilled chicken. It's also great for tacos, frittatas, french bread pizza (I shred the chicken and mix it with ranch and spices, spread it on french bread and top with roma tomatoes and shredded mozzarella, then bake). If you make salad next time, try a chop salad with chopped deli turkey, olives, avocado, roasted corn, cheese, cucumber, tomato and more for a bigger variety.
