>Veggie Stir Fry

>Looking for a healthy, veggie-filled dinner?  Look no further…here’s the recipe for a great veggie stir-fry I made tonight!

FIRST: Get your veggies!  Here’s what I used:

You can really use anything…there were some snow peas in the veggie mix, but I would have loved some more!  I also added a can of water chestnuts and 1/3 cup of yellow onions.

Begin by sauteing the 1/3 cup of yellow onions with 1 TBSP of minced garlic, and about 2 TBSP of olive oil:

Once they’ve caramelized slightly, add some of your raw veggies (save the mushrooms and water chestnuts for the end)

Let them cook on a low heat for 5-6 minutes.  Then, add the stir-fry sauce (recipe below):

Let it cook in the sauce for another 5 minutes.

Finally, add the mushrooms and water chestnuts:

Let it cook together for about 2 minutes

…serve over rice and enjoy!

STIR-FRY SAUCE:

3/4 cup water
1 TBSP cornstarch
1 TBSP ketchup
1 TBSP soy sauce
1/4 cup vinegar
1/8 cup sugar

Combine together…stir into your favorite stir-fry veggies!
