>Rice, Black Bean & Feta Salad

>I don’t usually post recipes on my blog, but I decided to try something different today! 🙂

As warmer weather slowly creeps in, I am pulling out my summer recipes, and this is my ultimate favorite summer salad!

Rice, Black Bean & Feta Salad

1 1/2 cups of cooked rice (I use brown rice…it’s healthier)
1 can black beans (drained & rinsed)
1 1/2 cups of chopped tomatoes
1 (3.5 oz) package of Feta cheese (plain or flavored)
1/2 cup chopped celery
1/2 cup chopped onions
1/2 cup Italian dressing (I use reduced-fat)
2 Tablespoons chopped Cilantro (If you hate Cilantro, you could use parsley instead)

Cook the rice, and let it cool while you combine all of the other ingredients.

Combine all of the ingredients with the rice once it’s cooled, and then chill it in the refrigerator for a few hours before serving.  Serve cold, and enjoy as a perfect summer (or early spring!) lunch.
